I love these easy, low-carb banana pancakes! They are super simple and easy to whip up for breakfast, or even as a snack! ❁
- 1 ripe banana
- 2 eggs
- pinch of salt
- dash of baking powder (~1/4 teaspoon)
- vanilla extract
In a large bowl, mash the ripe banana until it is smooth and creamy. Add the two eggs and whisk to combine. Add the salt, vanilla, baking powder, and cinnamon. Stir to combine. Alternatively, use a blender to whip the ingredients all together! This creates a smooth and airy batter.
Now, simply fry them like normal pancakes! Beware that they will be less firm than traditional pancakes, so I tend to pour small, silver-dollar style pancakes. Top with shredded coconut, berries, maple syrup, or agave!
