Paleo Blueberry & Dark Chocolate Pancakes

A delicious twist on the original paleo/banana pancake recipe! 

Ingredients:

  • 1 ripe banana (the spottier the better!)
  • 2 eggs
  •  1 tablespoon and 1 teaspoon cocoa powder
  • 2 tablespoon date syrup
  • fresh blueberries

Method:

A a large bowl, mash the ripe banana until it is smooth. Add the eggs and 1 teaspoon of cocoa powder and whisk. Alternatively, you could blend the eggs, cocoa, and banana in a blender until creamy.

In a separate small bowl (or ramekin), measure out 2 tablespoons of date syrup. Add one tablespoon of cocoa powder, and stir to combine. Microwave for 5-10 seconds to ensure the emulsification of the cocoa powder. Set aside.

In a nonstick pan, cook the pancakes as normal. Small, silver-dollar style ones work best! Add a few fresh blueberries to each pancake before flipping, or reserve the blueberries as a topping!

Garnish the finished pancakes with more fresh blueberries and a drizzle of the chocolatey date syrup. Enjoy!
