Banana & Toffee Paleo Pancakes

Banoffee Pie inspired pancakes that are equally healthy and delicious! 

Ingredients:

  • 2 eggs
  • 1 ripe banana
  • Chopped dates
  • Date syrup
  • Cinnamon
  • Salt
  • Vanilla extract
  • Optional: Shredded coconut, chia seeds, hemp seeds, ground flax seed

Method

In a bowl or a blender, combine the eggs and ripe banana. Feel free to add any chia, hemp, or flax seeds to the batter, as they will create a thicker and more protein-dense pancake. Mix/blend until smooth. Add 1/4 teaspoon vanilla extract, a pinch of salt, and a dash of cinnamon. Blend/mix until all ingredients are incorporated.

Heat a frying pan on medium/high. Grease the pan. I used coconut oil, but avocado oil, Pam Spray, or olive oil are all fine!. Fry the pancakes in small, silver-dollar style shapes to avoid breakage when flipping, as these pancakes are very delicate!

As the pancakes finish cooking, stack them on a plate. Top with chopped dates and date syrup to mimick the flavor of toffee sauce. I prefer medjool dates for their superior flavor and texture. Feel free to add any additional seeds or flaked coconut to enhance these pancakes’ decadence!
