These pancakes taste like the real thing, but instead provide an ample dose of protein and fiber with minimal sugar!
- 1 scoop protein powder (any flavor)
- 3 egg whites
- 1/2 cup raw rolled oats
- 1/2 ripe banana
- 1 tsp baking powder
- Optional: chia seeds, hemp seeds, agave
In a blender, blitz the oats until the mixture resembles flour. Add the remaining ingredients and blend until smooth. If you wish, you may add chia and/or hemp seeds to help thicken the batter and add Omega-3s and fiber. Additionally, you may add a tablespoon of melted coconut oil to make the pancakes more moist.
Heat a pan on medium-high heat and grease. I use coconut oil, but avocado oil, olive oil, or Pam spray work too!
Cook the pancakes for about one minute on each side (this will vary on your stovetop).
Garnish with fresh berries, coconut flakes, agave syrup, or maple syrup!
