Easy Garlic & Parsley Zoodles

Zoodles, or zucchini noodles, are a delicious low-carb substitute for pasta. As someone with an autoimmune disorder, avoiding gluten and processed carbohydrates is essential for maintaining a healthy weight. Zoodler devices can be purchased as stores like Sur La Table, Bed Bath and Beyond, Williams Sonoma, or Amazon!

This easy, basic zoodle recipe can be modified with different herbs and spices if garlic and parsley aren’t your style.


  • 1 medium zucchini or yellow squash, zoodled
  • 1 clove of garlic, minced
  • 1 tablespoon of olive oil
  • 1 tsp dried parsley flakes


Place a sautée pan over medium-high heat. Drizzle 1 tbsp olive oil in the pan, and sautée minced clove of garlic until golden. Place the zoodles into the pan, using tongs to toss to coat. Sautée the zoodles until they are soft (about 3-5 minutes). Serve with salt and pepper to taste, and sprinkle with dried parsley.
